They essentially made champagne, but with milled heirloom apple varieties. They have three orchards on the Central Coast: two down in Santa Barbara and one in Paso Robles. They wanted to showcase their sparkling apple wine techniques with Malus (Latin for apple). Fermented and aged in Pinot Noir barrels for 4 months, then
